Bittersweet (Cacao content 65 to 84%)
Semisweet chocolate (Cacao content 50 to 64%)
Dark Milk chocolate (Cacao content 35 to 45%) A category of milk chocolate that has a much higher percentage of cacao, which produces a much fuller, more pronounced chocolate flavor than milk chocolate.
Milk chocolate (less than 35% Cacao content) Milk chocolate is made by adding milk or cream to sweeten and lighten the chocolate flavor. Beautifully made milk chocolate comes from fine cacao bean and has a clean, smooth and sweet flavor.
White chocolate White chocolate does not actually contain any cacao and, therefore, is not really chocolate. High quality “white chocolate” is made from cacao butter, sugar, lecithin and vanilla.
Cacao Nibs Tiny pieces of unsweetened, roasted and cracked cacao beans that have an intense chocolate flavor. They add an interesting crunchy texture.
